I have created this broth with love, inspired by all feel good ingredients. I lean a little to some asian flavours for inspiration too.
The combination of ginger and turmeric may help relieve pain, decrease nausea, and enhance immune function to help protect against illness and infection. Adding some black pepper may help the body absorb the curcumin - the anti inflammatory property found in Turmeric.
The subtle flavour of Star Anise also brings it's own health benefits to the party. Enjoy!
Feel Great Broth
2L Chicken Stock (or 2 cooked chicken carcasses, 2L water, 2t good quality mineral salt)
1-2 inch long piece of fresh turmeric, cut in quarters
2 inches ‘chunks’ of ginger root, cut in quarters
2 bay leaves – fresh or dry
¼ or ½ (of the star), of the whole Star Anise spice
1-2 t peppercorns
2 carrots, chopped into chunks
2 celery sticks, chopped into chunks
1 medium onion or leek (my preference), chopped into chunks
2 garlic cloves, cut into quarters
A handful of chopped parsley
2T Miso paste
2T Mirin (Japanese rice wine – optional)
½ t sesame oil
Place all ingredients into a large pot on a low heat. Simmer for 3-4 hours.
Cool and pour through a sieve into another container. Add salt & pepper if further seasoning required.
Sip throughout day or enjoy for a meal. Or, use as a stock base for other soups/dishes. Cool before freezing.
